My husband started a more intense workout and has to supplement it with much more protein. He's eating more food protein, but as far as supplement shakes we are wondering what the difference is between whey and soy and other protein shakes. Thanks!

All 'Proteins' are made from Amino Acids, fitted together in different ways like interchangeable pieces in a jigsaw puzzle.
The general idea in Bodybuilding is to eat the right 'balance' of Amino Acids so that your body can make 'Muscle Proteins' (actin, myosin, fibrin and collagen, together with several other types) efficiently.
There are some disagreements about the best way to do this, because some of the foods that have a 'profile' of AAs that matches human muscle closely (like egg for example), aren't very easy to digest. Whey is often the easiest protein to digest, but some people are better at this than others. Soy protein (from soya beans) can cause intestinal gas, for some people.
The best solution is usually to try different products, find out which one works best for the individual, and 'correct' its profile by taking amino supplements.
This approach involves learning about AA profiles, and especially about the 'Essential Eight' amino acids. It can feel like hard work, but the effort is very worthwhile, especially because of the other bodybuilding knowledge that you will pick up while researching the topic.
